Brazilian Picanha and Mexican Street Corn

Mexican Street Corn (Elotes)

  • 1 bag frozen corn

  • 3 tbsp mayo

  • 3 tbsp sour cream

  • 1/4 cup feta

  • 1/4 cup parmasean

  • 1/4 cup shredded cheese

  • 2 tbsp unsalted butter

  • 1 tbsp hot sauce of your choice

  • 1 tsp paprika

  • 1 tsp chilli powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1 lime, juiced

Mix all ingredients together. Bake covered or place on grill/smoker at 400F 20-30 minutes until the edges start to brown. Sprinkle the shredded cheese on top, put back into the oven or grill uncovered until the cheese melts. Remove from heat, and serve as a side, or as a dip for your favourite tortilla chips.
